Even though I’m not a huge fan of cold weather, the foodie in me loves this time of year because the food is all warm and comforting. A couple weeks ago we were hungry, but didn’t want to leave the house, so I decided to see what I could come up with based on what we had in the house. There was leftover puff pastry from the pizza puffs I made on New Year’s Eve and I had a can of chicken breast that I purchased to make chicken salad lettuce wraps, but I didn’t end up making them. Making these at home has satisfied my longing for the days when I’d through a frozen chicken pot pie in the oven after school. I can’t wait to use beef stew leftovers to make mini beef chicken pot pies.
